Hummus

Just because you eat a healthy diet free of legumes, doesn’t mean you can’t have hummus! Here pureed cauliflower stands in for chickpeas. Serve with garnishes and paleo pitas or vegetables for dipping.

Hummus

  • Serves: 8
  • Category: Plant

Ingredients

  • 1 cauliflower, small-medium
  • 1/4 c olive oil
  • 4 cloves garlic
  • 1 c tahini
  • 2 lemons, juice of
  • 1 tsp. sea salt
  • 1/2 tsp. cumin

Instructions

  1. Trim the greens from the cauliflower and boil until soft when stabbed with a fork.
  2. Remove the cauliflower from the water, chop slightly, and let cool.
  3. Place the cauliflower in blender or large food processor.
  4. Add the olive oil. Blend well.
  5. Add the tahini and other ingredients.
  6. Puree to a smooth consistency.
  7. Adjust seasoning to taste.
  8. Garnish with your choice of cayenne pepper, olives, parsley, olive oil.
