These are as awesome as they look! Pure cheesy-oniony deliciousness from The Ketogenic Cookbook. I did these particular ones in a full-size muffin pan instead of mini, and just baked them twice as long. If you do not already own a copy of the cookbook, you can find the tots recipe here.
The key to getting them right is to get the water out of that zucchini! I shred, and then spin (yes, in a salad spinner), and then roll mine in tea towels to sit overnight in the fridge.
